This is the one I have. I didn't find it at any auto parts store, I ended up getting it from a plumbing supply place.
The valve and little tube on the fitting under the gauge is to relieve the liquid pressure before disconnecting.

No. The flap should be fully closed if the engine isn't running. Here's how it should work. The flap is closed with the engine off, as you crank the engine air is pulled in through the flap during the intake stroke. This forces the flap open, which closes a contact that sends 12V to the fuel pump. You now have air and fuel. With good compression, correctly timed spark, and pulse signal to the injectors, the engine will run. The various components involved with engine management in the L-Jetronic system will determine how well it runs.
You need to find out why the flap is stuck open. See if you can gently close it. Take the black lid off of the AFM and check out the condition of the spring. You can move the flap with the chrome arm in the AFM. Open the flap with it, let it go and the flap should snap closed. Your plenum looks clean, you may have to lube the pivot points. Use a dry lube like dry silicone so it doesn't attract dirt.
Any ethylene glycol based (green) coolant is fine.

Do you run the coolant straight or 50/50?
Hmm well it ran and somewhat kept an idle with that door open. I was able to push it shut when I had it open and it felt like it would spring back open? I'll have to cut that top off and see what it's like inside. It's still sealed on.
Are you sure the flap was open? The flap is connected to the resistence track in the AFM which tells the ECU how far open the flap is (how much air is coming in). With the flap fully open your engine should be running at max. You may have the path of air confused, causing you to think the flap is open when it's closed. If you're opening the flap from the boot side, remember that's where the air is leaving the AFM. There's a diagram of the flap system in this manual: http://www.firstfives.org/faq/ljet/jetronic.pdf

Ahhh yah now that I see tha I'm pretty sure it is right. I had the car having a rough idle like its not firing on all cylinders.
I don't want to let it run too long though.
Is it just straight coolant then? Or do you dilute it?
